Guatemalan blue squash seeds
The Guatemalan blue squash is a rare heirloom that has its roots in South America. Each squash is smooth with creamy yellow flesh and can reach anywhere between 20-26 inches long. These are banana-shaped and will ripen to a grey-blue-green color with lighter striations ornating the outer skin.
Guatemalan Blue squash is convenient as you can keep them in the refrigerator and cut off pieces as you need and plastic wrap the cut end when you don't need it. Each slice can be grilled, pan-seared, or steamed. This squash also lends itself well to soups, stews, and curries.
When roasted, this squash caramelizes extremely well due to its natural content. If you roast it brushed with oil or butter, the sugars in the flesh will actually form a candy-like crust. Think of it as a creme brulee in squash form. If blended with butter or dairy, it forms a sweet silky smooth texture. There aren't enough great things to say about this squash. It's unique, sweet, and has earned its name. Fruits can get up to 18" long and 6" wide.
