This variety of cilantro is slow bolting. For those who may not be familiar, bolting is the act of a plant growing upwards and sprouting blooms in preparation to produce seed. At first, this sounds like a good thing but hear me out. Bolting can change the flavor of a plant and not for the better. When lettuce bolts, for example, the leaves and stems become extremely bitter. When a plant bolts it will stop producing vegetation and focus on bloom and seed production. With this variety of cilantro, the bolting has been slowed to allow you a longer harvest of cilantro.
