New Zealand Spinach was widely used by the Maori people in New Zealand. It was eventually cultivated and introduced by Captain Cook in the 1700s. This is a fast-growing perennial with a bush-type growing habit. The leaves are succulent and slightly fuzzy, with a unique triangular shape. 

Where most spinach needs shade to partial shade, New Zealand spinach thrives in hot weather. It stands proud where other varieties tend to wilt, and dry. Since is a perennial, warmer climate that can be harvested from this year-round. If you are in a cooler climate, fret not, this can be grown as an annual, in a greenhouse, or in a sunroom.

 

This does well in containers and raised beds, as well as traditional gardens. You should have plenty to share with neighbors and friends since this grows so quickly. This is great for salads, stir-fries, smoothies, or baked into quiches. The leaves are sweet when. tender, but can turn bitter when grown to maturity. It's a matter of preference when you want to harvest the. Be it tender or mature, the flavors can lend themselves to numerous dishes.
