The Mashed Potato squash is bright white inside and out. When baked or roasted and then mashed, they resemble and taste similar to mashed potatoes. These are an excellent alternative to potatoes as the carbohydrate count is lower and this squash is nutrient-dense.
The flavor has been described as silky and subtly sweet. These make striking ornamentals, but a true appreciation of this squash is best expressed on the dinner table. These are best served roasted, baked, steamed, or mashed. Each squash will weigh an average of 1.5 - 2.75 lb. These can easily be trellised.
