Kakai squash seeds (organic)
This incredible squash is most sought after and grown because of its seeds. That's right! After the pumpkin has matured, you can cut into it and eat the seeds right out of the squash! There is no hull on the outside of the seeds. These fresh pepitas can be blended into smoothies, topped on salads, or used in sautéed vegetables to add contrast in texture.
Each kakai squash has a rich orange color and very subtle ribbing with dark green striations running up the sides. The blossoms themselves are also edible. They can be deep-fried, put in soups, or added to salads. Harvest the male flowers only since you want to keep your female blooms to form your squash.
